Substitute the noodles with rice stick noodles, swap both soy sauces for tamari, and add 2 tbsp of dark brown sugar during the stir-fry stage.

Fry in batches if your wok isn’t large enough.

If you can’t find sweet soy sauce (kecap manis), make a quick substitute directly in the wok — mix 2.5 tbsp of regular soy sauce with 2 tbsp of dark brown sugar, and add it to the noodles at the seasoning stage.

To swap the seafood for chicken, use 300g of diced chicken breast instead — stir-fried the same way, this becomes a simple Chicken Bakmi Goreng.
