Works brilliantly the next day with other meat, a fried egg, or just good bread. You can make this with sausages instead of lomo — brown them whole, slice on the diagonal before returning to the pan.

The beans are worth making double — they keep for 3 days in the fridge and work brilliantly the next day with a fried egg, grilled fish, or just good bread. Make twice as many and you've got two completely different dinners sorted.

This works just as well with sausages. Brown them all over in the same pan first, then nestle them into the beans for the last 10 minutes of simmering so they finish cooking through and soak up the sauce.
