When shaping the dough balls, check there are no cracks on the surface before dropping them into the boiling water. A seam or crack lets the palm sugar leak out into the water instead of staying put for that burst of molten syrup when you bite in.
Don't let the name put you off if you're avoiding gluten — "glutinous" just describes the sticky texture of this particular rice species, not the presence of wheat. There's no actual gluten in glutinous rice flour.
